With the holiday season just around the corner, Steven Stanfield, Monica Donald and Ross Meyer have created a new hands-on nutrition class with the goal of heading off all of the digestion and weight gain problems that typically follow up on the tail end of the holidays. While this time of year often finds consumers inundated with messages about healthy eating, Stanfield, Donald and Meyer are taking an ancient approach to modern dietary challenges. The three Holistic Health Coaches have begun showing their clients how to use techniques such as fermentation with whey - used as far back as 605 BC by the Babylonians - and preparing homemade stock to create healthy foods.

Why make this return to the past? Science has come around to the view that these ancient techniques can enhance the quality of our food. There is a good deal of evidence that the process of fermentation, for example, increases vitamin, mineral and enzyme content, and at the same time makes those nutrients more available to the body. Stanfield, Donald and Meyer insist that these traditional preparation methods don't have to be scary or exotic either, pointing out that familiar foods like ketchup and mustard were originally fermented. Reincorporating fermentation into those condiments can transform them from empty calories into whole foods with healthy nutritional benefits.

The Meals that Heal class also demonstrates the economic upside to these techniques. The class shows students how to save money by preparing their own healthier soup stocks, vegetables, grains and condiments using traditional food preservation methods. Students also learn how to incorporate less expensive whole foods in place of boxed, processed food products. Bayside Marin’s Evening Outpatient Program allows patients to remain at their jobs while getting needed substance abuse treatment.

In today’s tenuous economy, many people in need of substance abuse treatment are putting off recovery for fear of losing their jobs. To help provide treatment to those in need, Bayside Marin, a premier residential addiction treatment center, created an Evening Outpatient Program that allows patients to remain at their jobs while going through recovery.

“People are really afraid. They want very much to come in for treatment but decide not to because they don’t want to lose their jobs,” said Bayside Marin Clinical Director Pamela Alba, MA. “So we’ve made changes in the way we work with people.”

Bayside Marin’s Evening Outpatient Program provides 10 weeks of treatment to patients who have detoxified, can maintain abstinence for a period of time, and who need some support, structure and education in recovery. The program takes the components of the treatment center’s 30-day in-patient program and adapts them to a schedule that allows patients to continue working while getting treatment for their substance abuse.

“People are able to successfully reenter their lives and keep their daily activities going while placing a needed emphasis on recovery,” Alba said.

Patients participate in 30 group sessions, which are held on Monday, Wednesday and Thursday from 6:00 to 8:45 p. m. to accommodate regular working hours. These groups help patients enhance their communication and problem-solving skills, understand their substance abuse problem more clearly and obtain support from others who are in recovery.

Individual therapy sessions are held with an outpatient therapist once per week. Through individual therapy, patients can develop and review their treatment goals, monitor their progress and resolve obstacles to their recovery. Therapy can also help patients address any mental or emotional issues they are experiencing, such as depression, anxiety or self-defeating personality traits, that may exacerbate their substance abuse.

Bayside Marin’s Evening Outpatient Program also gives patients access to education and awareness classes, onsite self-help support groups (including Alcoholic’s Anonymous, LifeRing and SMART Recovery) and access to the treatment center’s gym facilities. The treatment center encourages patients to start building an outside support system while they are in outpatient treatment and to maintain an exercise program to help support recovery.

A critical component of any substance abuse treatment program is aftercare, and patients in the Evening Outpatient Program receive three years of continuing care following completion of the program. Patients develop an extensive aftercare plan that includes ongoing therapy, self-care, relapse prevention techniques and self-help support groups. During their continuing care, patients are provided monthly check-ups by a staff member to minimize the chances of relapse.

Bayside Marin also supports patients through a strong alumni program that provides continuing support for patients. Alumni have access to a weekly alumni group, periodic lectures and events organized by other program graduates.

“The 30-day program is just the beginning,” Alba said. “It allows a person to invest in their recovery in a substantial way.”

-- Don't cater to local wildlife. Animals are our friends, but they're not always friendly. If you're standing between a bear and her cubs, for instance, you're in the wrong place. Research the local area, follow all of the suggested precautions, and pack your food in airtight containers that reduce or, ideally, eliminate aromas that might entice local critters to stop by for a snack. Before turning in for the night, find a high branch away from the campsite where you can hang your food supplies out of reach of the tallest animals in the area.

-- Pack for weather changes. Unless you're camping in, say, Death Valley, you should be ready for uncomfortable temperature swings. Particularly in mountainous regions, daytime and nighttime temperatures can vary by several dozen degrees, and a cold and/or rainy night can turn a fun family outing into a miserable experience if you're unprepared for it. In addition to warm clothes, be sure your sleeping bags can handle chilly climes and your tent is protected from the rain and water build-up on the ground.

Making running part of a workout routine leads to better physical stamina and a more positive state of mind—but a detrimental foot injury can quickly stop runners in their tracks. Keeping feet healthy and pain-free can go a long way toward ensuring that every run is enjoyable, for both experienced runners and those just starting out. Following a few simple steps provided by the American Podiatric Medical Association (http://www. apma. org/) (APMA), before hitting the trail or treadmill, can keep foot and ankle injuries at bay.

“Some of the most common running-related foot injuries that today’s podiatrists treat are arch pain, tendonitis, and blisters,” said APMA president Kathleen Stone, DPM (http://www. apma. org/kathleenstone). “However, if runners can take just a few minutes to stretch properly pre-workout, select appropriate footwear, and see a podiatrist immediately when foot pain occurs, many of these ailments can be avoided entirely.”

In order to get the most out of each run without falling victim to injury, APMA recommends the following:
 Select a good running shoe: According to Karen Langone, DPM, president of the American Academy of Podiatric Sports Medicine (http://www. aapsm. org/) (AAPSM), the most important running tip is proper shoe selection. “A running shoe purchase is dependent upon the type of foot and function of the foot for the individual. Runners should research shoe construction and keep in mind that footwear can vary in size from one manufacturer to the other,” she said.

APMA has recently given several running shoes (http://www. apma. org/runningproductsresource) its Seal of Acceptance for allowing proper foot function, including models made by Puma, Mizuno, Asics, Reebok, Avia and Ryka. A sports medicine podiatrist can help aid in the footwear selection process if needed.

 Select good socks: Runners should always fit shoes with the socks that they plan on wearing during a run. Socks should be made of a poly-cotton blend that pulls moisture from the skin, fit well and be comfortable when worn with a running shoe.

 Stretch out and build momentum: Before a run, begin by warming up and gently stretching for 5-10 minutes, focusing on lower leg muscles. Amateur runners should start with short distances, increasing distance over time to help prevent injury. All runners should begin every workout slowly, as this allows the body to warm up further and decreases the chance of muscle strain. Runners should focus on keeping both the feet and entire body relaxed, avoid tensing or cramping toes, and run with a gait that feels the most natural. Runners should stop running immediately if any pain is experienced.  Cool down and rest: After reaching the end of a running workout, cool down and stretch for about 10 minutes. Submerging the lower extremities in an ice bath after longer runs can reduce muscle soreness, as can the use of a self-massager designed for post-athletic activities (Track Shack’s Therapeutic Hot & Cold Foot Massager has the APMA’s Seal of Acceptance).

Muscle pain is common after exercise, and minor injuries may be treated with the RICE regimen (rest, ice, compression, elevation). However, if pain does not resolve itself after several days—or returns immediately upon resuming exercise—runners should seek out care from an APMA member podiatrist immediately.

Circuit Court of the City of Fredericksburg, VA. August 2008 - Case # CR 08-390 & 391: City officials and judiciary appointees enact their own restaurant liquor laws to impose 21 felony charges against the partners of The ORM Group, according to Ronald Kublawi, one of the partners.

During May 2002, a partnership registered as, The ORM Group, is formed between Kublawi and 2 other partners. ORM signs a 15-year lease with The Silver Company to take over a 2-story 30,000 sq ft building in Fredericksburg to operate Uncle Sam's American Grill, providing a banquet facility, a restaurant, a sports bar and an entertainment spot.

During first year of operations, Uncle Sam's built a politically-correct reputation. With a staff of 150, its banquet facilities accommodated social and political functions hosting the Virginia Mayor, the Chamber of Commerce, the Fredericksburg Police Department, plus many corporate bookings, weddings and Christmas parties. Often, entertainment included 3 live bands performing Southern and Classic rock music.

Without paying proper attention to the exclusion of a non-compete clause from their lease, by 2004 the ORM found themselves surrounded by nationally known franchise restaurants, causing a loss of $1 Million in food sales during its second year of operations.

To make up for revenue loss, the ORM expanded entertainment venues to include DJ(s), Ladies' nights, Dance and Hip-Hop music. This shift in entertainment identity attracted a younger crowd and a major influx of Afro-American clientele. That is when conservative City officials made a decision to drive Uncle Sam's out of their town. That is when an American with an "unwanted" heritage is typically asked by a Southern official: "You ain't from around here boy, are you? Cause we don't want your kind".

Partners of Uncle Sam's survived a 5-year struggle from 2002 until 2007 by working around the clock and literally sleeping in the banquet rooms. They continued to fund operating losses through SBA financing and private equity injection with the hope that City officials will back off

Uncle Sam's withstood all sorts of pressures from: front page negative publicity by local papers, security issues with the Police Department, over-capacity with the Fire Marshall, kitchen compliance with the Health Department, bar compliance with ABC agents and eviction notices with the Landlord.

But the ORM partners could not withstand being dragged to prison for the mere attempt to survive. When all attempts to pressure the business failed, the City Manager called his dogs to handcuff the partners and throw them in the Rappahannock jail. The City's justification is that the ORM partners fraudulently owe $198,000 in unpaid city meals tax on "Unsold Liquor"?

"What the heck does that mean, Unsold-Liquor?" asked the first judge to whom the case was first presented? Because of his fair dealings, the City's witnesses, Commissioner and Auditor, intentionally did not show up to the hearing, thereby causing the first judge to issue a continuance to a future date, a date that is convenient to the City, when their favored pre-selected judge is pre-scheduled to rule in their favor.

So, what is Unsold Liquor and what rule did these officials enact?

The ORM liquor policy was to pour 1.75 ounces per drink. During trial, the ORM's key witness was an ex-member of the VA ABC board who is a practicing attorney specializing in liquor audits. His testimony was that "there is no VA ABC law, rule or regulation that dictates a bar owner to pour a limited amount of ounces per serving, nor is there a law that identifies the exact amount of alcohol to be poured in a single drink". He further added that "Uncle Sam's liquor policies were in accordance with industry standards and that the ORM partners do not owe the City any taxes at a 1.75 ounce level per serving".

Since his testimony was expected to fall on deaf ears, the judge ruled that Uncle Sam's should have poured 1.25 ounces instead of 1.75 ounces per drink. Since Uncle Sam's over-poured 0.5 ounces per drink on the 1.6 Million drinks sold in 5 years, the ORM partners are criminally guilty of meals tax fraud to the extent of $198,000. This is the new law the City officials enacted!

Despite that these proceedings had been informally communicated to The Justice Department, The FBI Civil Rights Division and The NAACP, this case continues to fall on deaf ears.

Researchers have found that a probiotic, or “good bacteria,” normally fed to cattle to enhance performance, also reduces instances of E. coli O157:H7 by 50 to 60 percent.

LUBBOCK – Texas Tech University, along with the American Meat Institute Foundation, announced today (April 24), a research breakthrough in the prevention of E. coli O157:H7 in live cattle. Researchers have found that a probiotic, or “good bacteria,” normally fed to cattle to enhance performance, also reduces instances of E. coli O157:H7 by 50 to 60 percent.

Mindy Brashears, Ph. D., a food safety scientist in Texas TechÂ’s Department of Animal and Food Science, described the probiotic, Lactobacillus acidophilus, as similar to the bacteria commonly added to yogurt. Cattle often are fed Lactobacillus acidophilus to enhance the ratio of weight gain to feed intake. The research was done by Brashears and Michael Galyean, Ph. D., also of Texas TechÂ’s Department of Animal and Food Science.

Brashears said eradicating pathogens like E. coli in live animals is a farm to table approach. “There are many interventions in the processing plant but very few in the feed lot environment. If we reduce it in the live animal, we reduce it in the processing plant and ultimately there is less in the ground beef and other beef products that arrive on the consumer’s table,” Brashears said.

Brashears and Galyean fed 180 steers one of three diets: a standard diet of grain and roughage, which served as the control group, or a standard diet that also included one of two strains of Lactobacillus acidophilus.

The researchers analyzed fecal samples from the cattle when they arrived at the Texas Tech lab, and every 28 days thereafter until they received probiotic supplementation. After a 60-day supplementation period began, samples were analyzed every 14 days. Researchers used USDA test methods – considered the most sensitive available – to detect the presence of E. coli O157:H7.

Researchers conducted the study during the summer months, when cattle are known to shed more E. coli O157:H7. The numbers of cattle testing positive for E. coli O157:H7 varied from 18 to 19 percent during the mid-feeding period, to less than 10 percent near slaughter. The cattle fed the probiotics, however, showed major reductions in incidence rates. The group of cattle fed one particular strain known as NPC 750 saw a 50 percent drop in the incidence of E. coli O157:H7.

In addition to reducing this pathogen, the probiotic is extremely cost-effective. The researchers estimate the cost of feed supplementation at roughly one cent per animal per day. The low costs are offset by improvements in feed conversion. “Our research affirms the benefits of probiotics in preventing E. coli O157:H7 in cattle,” Brashears said.

“In the same way that acidophilus in dairy products has health benefits for humans, this particular strain of Lactobacillus acidophilus clearly reduces the incidence of pathogenic bacteria in the gut of animals.”

BrashearsÂ’ findings confirm data from preliminary trials. Further confirmatory research studies are underway, which if successful will lead to commercial field trials. These field trials are aimed at affirming the benefits of this particular strain of Lactobacillus acidophilus.

AMI Foundation Vice President of Scientific Affairs Randall Huffman, Ph. D., stressed the commitment of the U. S. meat industry to enhancing the safety of beef products. “This new research is another tool in the food safety toolbox that can help make the U. S. beef supply -- already among the safest in the world -- even safer,” Huffman said.

Huffman said new technology developed over the last decade has helped achieve major reductions in bacteria on raw meat products, but still does not permit a pathogen - free meat supply. The AMI Foundation, he said, supports a “multi-hurdle” strategy throughout the production process. By using a combination of on-farm interventions like probiotics in cattle feed, careful in-plant processing techniques designed to destroy bacteria, careful temperature control throughout distribution and thorough cooking in restaurants and home kitchens, producers, processors, retailers, restaurants and consumers together can ensure the safest possible beef supply.

The research is part of a comprehensive Food Safety Initiative funded by U. S. meat and poultry companies and administered by the AMI Foundation. The initiative's goal is reduce and ultimately eliminate E. coli O157:H7 and Listeria monocytogenes on meat and poultry products.
