Seafood 101 – A Seafood Chef’s Guide to Selecting, Purchasing and Preparing the Most Impeccable Fish in the Market

One of the most popular New Year’s resolutions is to start eating healthier. There is nothing that fits the bill more than a seafood entrée. The truly wonderful thing about high quality fish is that it lends itself to many simple preparations that can fit either a low fat or low carbohydrate diet. Tenney Flynn, the Co-Owner and Executive Chef of New Orleans’ nationally acclaimed fine dining seafood restaurant, GW Fins offers a step-by-step “Seafood 101” to selecting, purchasing and preparing the best fish available.

“Without a doubt, the most important aspect of purchasing seafood is trusting your fishmonger,” states Chef Flynn. “Your relationship with your fishmonger is a lot like the one with your mechanic – you have to check references, shop around and when you choose one there is a strong element of trust involved that he knows more than you do and has your best interests at heart,” concludes Flynn.

When shopping for seafood, consumers should always ask the fishmonger how long the fish has been around. This does not, however take into account how many days the boat was at sea, what day of that trip the fish was landed on, how long it was at the dock, how far the dock is from the wholesaler that sold the fish to the market and equally as important, how the chain of temperature was maintained along the way. This uncertainty is why it is always best to eat fish the same day as it is purchased. 

The first rule of thumb in shopping for fish is if the fish, or fish department smells, it’s always best to leave and find something else to prepare. When purchasing a whole fish, there are several tell-tale signs to check for to find out if the fish is fresh. When opening the gills, depending on the fish, the color should be bright and dark red. If the gills have been removed, it has been done for one purpose, to disguise the age of the fish. The flesh should be springy to light pressure. If the fish has a shrunken look, especially around the eyes, it is a sign that it has been around for a while. The gills and belly cavity should smell like seawater. Farmed Salmon smells like cut watermelon. The more unpleasant the smell, the older the fish.

Most fish markets today have a small selection of whole fish. Filets are more commonly found and judging the age/quality of cut fish takes a more trained eye. Fish wholesalers have an expression ‘it cuts out good’ which means the whole fish is a little worse for the wear, but after filleting it won’t be as noticeable. The first thing the butcher learns is to fillet the oldest fish in the place first.

A fresh filet should have plump, moist and firm flesh with no separation of the “flakes.” The bloodline that runs along the backbone should be red or dark red. The inexpensive cryovaced tuna steaks with an unnatural magenta color are treated with Carbon Monoxide to enhance their color. “Beware of seafood labeling, like Dayboat, Line Caught, Top of the Catch, Diver Caught, and Sushi Grade, as these are just marketing terms that may, or more likely may not, be true,” cautions Chef Flynn.

Many seafood markets and grocery stores place FAS (frozen at sea) or previously frozen filets on ice in the display case to thaw slowly. According to Chef Flynn, this can be a good option. “I’d rather eat fish that was frozen just after harvesting, than ones that took a slow ride with too little ice. A rule of thumb is for every 2 degrees over 32 degrees the fish (whole or filleted) has withstood, a day of shelf life is lost,” instructs Flynn.

Many top quality seafood markets offer a combination of farm raised fish as well as wild fish. Even though wild fish are the last wild food that most Americans eat, there are several varieties of excellent farm raised fish. GW Fins in New Orleans, which is consistently rated one of the top seafood restaurants in the country, serves farmed Scottish and Canadian Salmon, Rainbow Trout from Idaho and North Carolina, as well as Catfish from North Carolina. The bottom line is that farmed fish provides a consistent supply of good quality, fairly priced seafood. Ultimately, freshness in the grocery store is easier to achieve since it’s a controlled harvest.

One of the most important factors in selecting seafood is knowing the flavor profile of the fish that is most pleasing to the person enjoying it. Below is a classification of fish based on a flavor scale from mild to full flavored, which is usually due to the fat content of the fish.

A Quick Guide to Selecting and Cooking Fish

Mild fish include red perch, flounder, halibut, farmed catfish as well as most snappers and groupers. These are usually very lean, cook quickly and lend themselves to sautéing or frying. A squeeze of lemon or a small amount of browned butter and fresh chopped parsley are all these varieties need. The leaner or milder fish should not be cooked much past medium, in order to avoid drying.

Medium flavored fish would include Swordfish, Bigeye Tuna, Monkfish, Haddock, some Salmons, Sea Trout and Bronzini. These fish can be sautéed but hold up well to poaching or braising, broiling or grilling.

Full flavored fish include Chilean Sea Bass, Sardines, Pompano, Cobia, some Bluefin Tuna, Mackerel, and fat Salmon. These fish do very well wood grilled. As a rule, the higher the fat content the fresher the fish must be to taste sweet. The flavor that people call “fishy” is oxidized fat. Salmon is usually a good indicator of a guests’ preferences – if they find that too “strong” they probably should avoid the third category.

“Regardless of what fish you are cooking, have everything else for the dish and all side dishes cooked ahead of time before the fish hits the pan,” advises Chef Flynn. “The difference between moist, juicy and flavorful …. and dried out….. is about two minutes,” he warns.

Determining if the fish is done cooking takes some practice, but a visual test most often works best. As flesh cooks, it gets smaller. The second test would be color. If a thin filet is being cooked, cut into the back of it to check for opacity. If it’s a little thicker, inserting a metal skewer or a small paring knife blade into the thickest part will act as a thermometer of sorts. When held to the back of the wrist, if the knife is very warm, the fish is definitely done.

According to the MDA (http://www. mda. state. mn. us/en/news/releases/2010/nr-2010-01-15-atrazinereview. aspx), “The review finds that atrazine regulations protect human health and the environment in Minnesota.”

“Minnesota's independent and exhaustive evaluation determined that atrazine use, as currently managed and regulated, is not harmful to humans or aquatic life and that it is rarely detected in Minnesota's public water systems,” said Dr. Tim Pastoor, principal scientist at Syngenta Crop Protection. “Minnesota’s findings affirm what 6,000 scientific studies and 50 years of experience have told us. When the science does the talking, atrazine is found safe to use.”

Atrazine is a well-studied herbicide applied to corn, grain sorghum, sugar cane and other crops in the U. S. that farmers rely upon worldwide to produce safe, affordable and abundant food. In addition, atrazine is a key component of soil conservation programs.

Small amounts of atrazine may run off certain fields during heavy rains following its application. However, the Minnesota review stated, “Detections of atrazine in public water supply systems in Minnesota are rare.” State scientists also monitored private water wells. The review stated, “Atrazine concentrations in private wells are expected to be absent or below established health benchmarks.”

Benefits to Farmers

Farmers rely on atrazine to control weeds on more than half of U. S. corn, and a 2003 EPA review said “the total or national economic impact resulting from the loss of atrazine to control grass and broadleaf weeds in corn, sorghum and sugar cane would be in excess of $2 billion per year (http://www. epa. gov/oppsrrd1/reregistration/atrazine/atrazineadd. pdf#page=13) if atrazine were unavailable to growers.”

The Minnesota review (http://www. mda. state. mn. us/chemicals/pesticides/atrazine/~/media/Files/chemicals/atrazine/reviewsummary. ashx) discussed the importance of atrazine to farmers. It stated, “Atrazine continues to be an important weed-control tool in Minnesota corn production.” University of Minnesota weed scientists are quoted as saying “there are no direct replacements for atrazine in preemergent weed control that are currently registered for use in Minnesota.”

“Syngenta is an active steward of all its products including atrazine,” Pastoor said. “We work closely with farmers and farm groups to help promote agricultural best-management practices to minimize runoff and to inform applicators about products containing atrazine and the label requirements of those products.”

The review incorporated public comments at the beginning of the review process and completed its 60-day public comment period on March 19.

At the end of each day dictation was downloaded to the service provider and would start trickling back 24 to 36 hours later. Reports were then manually cut and pasted into Aiken’s Radiology Management System (RMS), adding further delays. A report took an average of 48 hours to complete.

Now, Aiken uses WinScribe digital dictation solution. Once a report is dictated it is immediately routed to the speech recognition server for conversion from speech to text. Aiken transcription staff receives both the dictated voice file and a near-perfect draft of the dictation.

Using WinScribe’s PC/Internet transcription application, transcriptionists correct any errors. The completed report is then automatically merged into Aiken’s Radiology Management System (RMS) via WinScribe’s HL7 interface.

At the same time, WinScribe submits the corrected text back to the voice recognition server, which uses the corrections to make adaptations to the radiologist’s voice profile. This constantly improves the voice recognition accuracy.

‘WinScribe has eliminated the requirement to cut and paste transcribed text into Aiken RMS cutting average report turnaround by up to 48 hours. Reports are available to physicians on average 90 minutes after the radiologist dictates the report. Transcription productivity has improved by more than 150 percent’, says Howard Sanford, Aiken’s Radiology Department head. ‘By automating most of the manual processes, WinScribe has eliminated costly and inefficient human error. The reports are available in our RMS sooner and without mistakes’.

In March, the US Food and Drug Administration (FDA) asked the makers of Protopic and Elidel to include a black box warning on their labels and marketing materials. In one clinical trial, infants and children younger than 2 years of age treated with Elidel had a higher rate of upper respiratory infections than those treated with a placebo cream.

Since the long term side effects of using Protopic or Elidel have not yet been identified, the FDA recommends only using the prescription creams as a last resort and then only for a limited time. The FDA also warns that patients under two years of age or those with weakened immune systems should not use either product.

Elidel is manufactured and marketed by Novartis; in June, ElidelÂ’s mid-year sales were down 14% from 2004, totaling $118 million in the US. Protopic, manufactured and marketed by Astellas Pharma Inc. (formerly Fujisawa Pharmaceutical Co.) ended its Chinese year this month with gross sales of $200 million (USD) worldwide.

The driving force behind the planned update was a warehouse automation initiative, according to Eaton. "We have an automated pallet building system called Vertique™, and the ultimate goal is to start that process earlier. By getting orders from the field more rapidly, we can start building pallets sooner, and that will reduce costs and increase productivity," said Eaton.

J. J. Taylor chose to go with the solution provided by Barcoding that combined the ruggedness of the MC9063 with the software functionality of Rutherford's SQL-based route accounting software package.

"The MC9063 appealed to us because it is rugged enough to handle the day-to-day at J. J. Taylor. Our employees are working around large pallets of beer and equipment can get some hard knocks," said Eaton. "We also liked the large screen size of the Motorola MC9063, how fast we can move between screens and the good memory to hold a lot of data."

Eaton is also looking forward to the future, "we plan to use the software and the Motorola handhelds to gather survey data in the field. We're also encouraging our reps to use them more for email, because our ongoing goal is to keep communications up. The Motorola mobile computers offer a lot of potential, and we're keeping our sights on that."

The new Plant Growth Controlled Environment Test Facility at Aberystwyth’s Institute of Grassland and Environmental Research (IGER) is playing a key role in the development of new, sustainable, grass varieties capable of providing high quality animal feed.

Designed, manufactured and installed by Weiss Gallenkamp of Loughborough, the new facility houses six high specification plant growth rooms and eight large capacity cabinets that can be programmed for a wide range of simulated growing conditions. A major objective is to produce grass varieties of high quality that are economic to produce.

However, grasslands of the future must balance these requirements with the need to protect the soil, sustain wildlife and maintain the appeal of the landscape. “The emphasis is on breeding environmentally-friendly crops that are drought and cold tolerant, need less fertilizer and cause less pollution, while still providing healthy and natural food for livestock,” says Dr Mike Humphreys, team leader of Grass Traits and Varieties Programme at IGER.

“This new facility allows us to simulate the growing conditions of grasses from the most northerly tip of Scandinavia to the coldest parts of the Tartra mountains in Poland and the driest regions of France.” The new Plant Growth Controlled Environment Test Facility represents a significant investment by the UK Government's Biotechnology and Biological Sciences Research Council and is pivotal to IGER’s role as a leading centre worldwide for research into the genetics, breeding, physiology, agronomy and ecology of plants and micro-organisms. In this regard the technology provided by Weiss Gallenkamp, which is also installing 32 controlled environment rooms in the Scottish Agricultural Science Agency’s (SASA), is a vital element, as John Toler, Controlled Environment Operations Coordinator at IGER, explains.

“The new facility can be accurately programmed to provide a wide range of simulated growing conditions (+10 deg C to +35 deg C). All plant rooms and cabinets have temperature and humidity control, as well as feedback control of lighting intensity, thus ensuring repeatability of all the environmental conditions.”

In fact, one of the plant growth rooms and cabinets was specifically designed by Weiss Gallenkamp’s engineers to accommodate cold acclimation tests with an extended temperature range down to +2 deg C – even with full growth lighting intensity. The novel application of mixed refrigeration technologies allows constant low temperature operation with a distribution within each of the plant growth rooms and cabinets of ±1.0 deg C.

Light levels of 1200 micromol m-2s-1 (100,000 lux) (although operationally, lower light levels are used normally) can be maintained, even at temperatures close to freezing. However, this did initially present Weiss Gallenkamp with a difficult challenge, due to the fact that the temperature-dependent luminous output characteristic of fluorescent lamps falls dramatically as the temperature is reduced. The solution involved separating the lamp system from the growing area by means of a transparent screen and regulating the temperature and light intensity of the lamps themselves, thereby ensuring that they remain at the optimum temperature for the required light output.

Through the adoption of energy efficient lighting and the latest control technology all Weiss Gallenkamp Fitotron series plant rooms and cabinets now offer, 25% greater energy efficiency, longer lamp life and true “dawn to dusk” simulation. Fitotron from the Greek word, Phytotron (plant house) allows the researcher access to most world climatic conditions while eliminating the variability found in nature.

The technology provided by Weiss Gallenkamp has already contributed to the successful use of hybrids developed in order to combine useful traits from species from two grass genera. These are Lolium (ryegrass) species, considered the ideal grasses for agriculture in Europe, and closely related Festuca (fescue) species which typically are more resilient against summer and winter stresses. “What we didn’t know until very recently is one of the reasons why Festuca is winter hardy while Lolium is winter susceptible,” says Dr Mike Humphreys. “What we have now been able to do, in a faster and more targeted way, is to simulate the exact cold temperatures in the new facility and study changes in gene activity under given conditions. We have been able to show that Festuca has a way of accepting excess light energy, which grasses encounter as growth rate declines in the autumn, and lose this energy as heat. We have been able at IGER to transfer successfully this mechanism from Festuca pratensis (meadow fescue) into two different Lolium species and monitor after 2 weeks of cold acclimation how this gene transfer has led to an enhanced freezing tolerance in Lolium.”

AthletiCo Employees Travel to Honduras to Provide Medical Care to Impoverished Communities

Medical mission trip gives AthletiCo employees new perspective on life

Oak Brook, IL (Vocus) May 8, 2010

During the week of April 11, twenty employees of AthletiCo Physical and Occupational Therapy traveled to Honduras with Global Medical Brigades to provide medical care to remote rural communities. In order to help the communities maintain good health and hygiene habits, the volunteers also assisted with building a latrine, water storage unit, stove with chimney, and concrete floors.

This is the third year AthletiCo employees have volunteered with Global Medical Brigades, a sector of Global Brigades. The international student-operated volunteer organization’s mission is to provide sustained healthcare relief to underserved communities throughout the world. This experience had a lasting impact on all AthletiCo volunteers who went on the trip including Kim Kistler, ATC, AthletiCo River Grove.

“As it did the first year, the trip really put things into perspective and made me more appreciative of what we have available to us,” says Kistler. “It is amazing to see people with so little do so much and be happy and appreciative for what we bring to them.”

First-time volunteer, Meredith Thomas, PT, AthletiCo Lake in the Hills, also noted how much the Honduran people appreciated receiving basic items like a bar of soap, toothbrush, and vitamins and was humbled by the experience.

“I was reminded of how fortunate I am to have food in my kitchen, a roof over my head, and clean water for my daughter,” says Thomas. “The volunteers on this trip are a great example of individuals who were willing to share what they have been given with those less fortunate.”

AthletiCo supported this medical mission trip by holding a medical supply drive in January at all of its physical therapy centers to collect various medications, soap, shampoo, toothbrushes, and even eyeglasses. In addition, AthletiCo and its employees contributed $6,077 toward purchasing additional medical supplies and helping to offset the volunteer costs of the trip. Employees also supported their co-workers by donating PTO hours to the volunteers.

Nearly 1,500 patients were treated during the four-day effort, which this year included dental patients. The importance of dental hygiene was taught, volunteers assisted with tooth extractions, and fluoride treatments were provided to the children of these communities. Medical stations were also set up for patient intake, triage, physician visits, and pharmaceutical needs.
